Ackee and Smoked Salmon Bagels
Try Ackee and Smoked Salmon Bagels for a quick and delicious recipe for a light breakfast or lunch with a Caribbean Twist.
Serves 2 Preparation time 5 mins – Cooking time 5 mins
½ tin Grace Ackee
Salt & pepper
200g smoked salmon, chopped
2 plain bagels
Heat olive oil in frying pan over a high heat. Added the drained ackee, season with salt and freshly ground black pepper. Sauté until lightly caramelised. Do not stir or over cook, as the ackee will become very soft.
Turn off the heat; add the salmon to warm it through.
Meanwhile, toast the bagel halves, arrange on plates and top with the ackee & salmon mixture.
Sprinkle with the black pepper and serve immediately.
